Cheese Beans

Hey everyone, I'm back from MN and I have lots of recipes to share!! Here's one of my favorites:

Cheese Beans (from Moosewood)

Begin soaking 3 cups raw beans at least 3 1/2 hours before you plan to assemble.

Ingredients:
6 cups cooked (3 c. raw) pinto or kidney beans
2 cups chopped onions
2 large cooking apples, in chunks
2 cups grated mild, white cheese (Muenster or Monterey Jack are best)
4 medium sized tomatos
6 T dry, white wine
2 tsp. chili powder
1 tsp. dry mustard
salt (about 1 1/2 tsp.)
pepper

Directions:
Preheat oven to 350 deg.
Clean the beans and soak at least 1 1/2 hours. Cook them, partially covered, about 1 1/2 hours.
Saute the onion in butter or olive oil and add chili powder and mustard.
Combine cooked beans (make sure they are cooked enough) with onions and remaining ingredients.
Pour into greased casserole dish, cover, and bake at 350 deg. for 35-40 minutes. Serve with fresh corn bread, or over rice.
